Jilly Wine Co. 'Banana Girl' 2021

The wine: Sauvignon Blanc (80%) was fermented on skins for 7 days & pressed to old French barriques. Chardonnay (20%) was fermented on skins for 3 weeks & pressed to stainless steel. Both components remained on gross lees for 7 months maturation prior to blending. Bottled unfined & unfiltered.

Fruit sourced from across the Central Tablelands. Namely from the Chalou vineyard just outside of Orange in Emu Swamp & Antonio's vineyard in Canowindra. Both sites are farmed organically.
